We made Murdya! (Murdya, Merudya, Murdiya)

Murdya is the national Gagauz seasoning, consisting of herbs growing in the south of Moldova. Widely distributed in the culinary tradition of Budzhak, in the national cuisines of the Gagauz and Bulgarians.

The Gagauzians cook it at home and there is no exact recipe. Myurdya usually includes green leaves of garlic, dried and chopped in a mortar, onions, dill, fenugreek (poyotu), parsley and wild onions - nectaroskordum.

Before use, salt, black pepper and paprika are added to the basic composition, at will.

Murdya is used in almost all national dishes - it is sprinkled on top of an already prepared individual serving (unlike the "Budzhak salt" - which is primarily suitable for quick marination of meat, vegetables, mushrooms and vegetable salads).
