Black Eyed Peas Salad

Ingredients
- ¼ - ½ teaspoon sumac from ASW
- ¼ teaspoon smoked paprika from ASW
- ½ teaspoon seasoning "Adjica" from ASW
- 2 teaspoons extra virgin olive oil
- 1/8 teaspoon sea salt
- 400 g of boiled lentil or beans or black eyed peas
- 1 cup chopped red bell pepper (about 1/2 a large pepper)
- 1-2 chopped tomatoes
- ½ chopped cucumber
- 3 scallions, thinly sliced on the diagonal
- Freshly ground black pepper from ASW
Method of preparation
- In the bottom of a medium bowl, whisk together the sumac, olive oil, and salt.
- Add the lentil or beans, tomatoes, bell pepper, cucumber and scallions to the bowl. Toss to coat in the dressing.
- Taste and add pepper as desired.
- Sprinkle with fresh parsley serve at room temperature or chilled.
