Black Eyed Peas Salad

Ingredients

  • ¼ - ½ teaspoon sumac from ASW
  • ¼ teaspoon smoked paprika from ASW
  • ½ teaspoon seasoning "Adjica" from ASW
  • 2 teaspoons extra virgin olive oil
  • 1/8 teaspoon sea salt
  • 400 g of boiled lentil or beans or black eyed peas
  • 1 cup chopped red bell pepper (about 1/2 a large pepper)
  • 1-2 chopped tomatoes
  • ½ chopped cucumber
  • 3 scallions, thinly sliced on the diagonal
  • Freshly ground black pepper from ASW

Method of preparation

  1. In the bottom of a medium bowl, whisk together the sumac, olive oil, and salt.
  2. Add the lentil or beans, tomatoes, bell pepper, cucumber and scallions to the bowl. Toss to coat in the dressing.
  3. Taste and add pepper as desired.
  4. Sprinkle with fresh parsley serve at room temperature or chilled.
