Eggplant "Parmigiano"

Ingredients

  • Eggplant - 4 
  • Spice "Oregano flowers" from MANTRA - 4 flowers 
  • Spice "Basil" from Santa Verde - 10g 
  • Strachatella cheese - 400g 
  • Parmesan cheese - 200g 
  • Onions - 2 
  • Garlic - 4 cloves 
  • Tomatoes cherry - 2 sprigs 
  • Olive oil - 120ml 
  • Breadcrumbs - 60g 
  • Butter - 60g 
  • Salt - to taste

Method of preparation

  1. Wash the eggplants, make a few punctures with a knife. Bake in the oven on upper and lower heat mode for 40 minutes. 
  2. Combine breadcrumbs and grated Parmesan. 
  3. Remove the cooked eggplants, peel them, sprinkle with a mixture of breadcrumbs and Parmesan. Turn on the "Grill" mode and bake until the cheese crust forms for another 10 minutes. 
  4. For the sauce, finely chop the onion and garlic, cherry in half, add basil.  
  5. Put everything in a frying pan, add olive and butter, fry onions and garlic until soft. Add the cherry and oregano. Add salt to taste. Simmer for 5 minutes. Add some more basil and oregano flowers. 
  6. Place some of the sauce and eggplant on a plate. On top is a strachatella and some grated Parmesan. Spread the sauce nearby. Enjoy your meal!
